This delicious creamy mushroom soup is the perfect starter or light meal. It's packed with flavor and easy to prepare. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 400 g mushrooms - 1 onion
- 2 garlic cloves
- 2 tbsp butter
- 1 l vegetable broth
- 2 dl heavy cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Clean the mushrooms and slice them. Peel and finely chop the onion and garlic. 2. Heat the butter in a pot over medium heat. Add the onion and garlic, and sauté for about 3-4 minutes until soft.
3. Add the sliced mushrooms to the pot and cook for about 5-7 minutes until golden brown.
4. Pour in the vegetable broth and let the soup simmer for about 15 minutes.
5. Blend the soup with an immersion blender or in a stand blender until smooth.
6. Stir in the heavy cream and season with salt and pepper. Heat the soup again, but do not bring to a boil.
7. Serve the soup garnished with fresh parsley.
