A delicious and savory Mediterranean vegetable pie filled with cheese and a variety of vegetables. Preparation Time: 15 minutes

Ingredients:
- 1 pre-made pie crust (e.g., pie crust, Kungsörnen)
- 125 g tomato-basil fresh cheese
- 200 g mozzarella cheese
- 0.5 tsp salt
- 2 eggs
- 1 dl cooking cream
- 450 g Mediterranean vegetable mix (1 pack)
- 0.5 tsp crushed pepper
Instructions:
1. Prepare the pie crust according to the package instructions. Press the dough into a 30 cm diameter pie pan.
2. Place the frozen Mediterranean vegetables in a frying pan and heat them until thawed.
3. In a bowl, mix together the tomato-basil fresh cheese, mozzarella cheese, salt, eggs, cooking cream, and crushed pepper.
4. Add the thawed vegetables to the cheese mixture and stir until well combined.
5. Pour the filling over the pie crust and smooth the top.
6. Bake in a preheated oven at 200°C (392°F) for about 30-35 minutes or until the top is beautifully golden brown.
7. Allow to cool slightly before serving. Enjoy!
