Ingredients:

- 4–8 naan breads (or other flatbreads)
- Artichoke Hummus:
- 1 can (2 dl) chickpeas, drained
- 1 can artichoke hearts in oil or water, drained
- 1 garlic clove
- 2–3 tablespoons chickpea liquid
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt to taste
- Additional Toppings:
- Feta cheese in oil marinade (e.g., Smoked chili)
- Fresh spinach
- Cherry tomatoes, halved
- Fresh parsley and basil
- Toasted pine nuts

Instructions:

1. If making the flatbreads from scratch, prepare the dough or use store-bought naan breads.
2. Drain the chickpeas and artichoke hearts. Peel the garlic clove.
3. Blend all hummus ingredients until smooth. Taste and adjust flavor with lemon juice and salt.
4. Heat the flatbreads until warm.
5. Spread a generous layer of artichoke hummus on each warm flatbread.
6. Top with spinach, cherry tomatoes, herbs, toasted pine nuts, and feta cheese cubes.
