A delicious salad combining roasted potatoes and broccoli served with a creamy hummus dressing. This salad is easy to prepare and tastes just as good warm as it does cold.
Preparation Time: 40 minutes
Serving Size: 4 main servings / 6 side servings
Ingredients:
- 500 g potatoes
- 250 g broccoli
- 3 tbsp olive oil
- Salt and pepper to taste
- 200 g hummus (store-bought or homemade)
- Lemon juice (optional)
- Fresh parsley or cilantro (for garnish)
Instructions:
1. Peel and chop the potatoes into evenly sized pieces.
2. Preheat the oven to 200 °C (390 °F).
3. Place the potatoes on a baking sheet, add 2 tbsp of olive oil, salt, and pepper. Toss well to combine.
4. Roast the potatoes in the oven for about 20 minutes.
5. Chop the broccoli into small florets and add it to the baking sheet with the potatoes.
6. Drizzle with another 1 tbsp of olive oil and roast all ingredients for an additional 15-20 minutes until golden brown and tender.
7. Serve the roasted potatoes and broccoli with hummus. Add lemon juice if desired and garnish with fresh herbs.
