Ingredients:

- 200 g gingerbread cookies
- 100 g butter
- 300 g plain cream cheese
- 100 g powdered sugar
- 1 tsp vanilla sugar
- 2 dl heavy cream
- 100 g berries (e.g., lingonberries or cranberries)
- A pinch of cinnamon

Instructions:

1. Crumble the gingerbread cookies into small pieces and melt the butter. Mix the cookie crumbs with the melted butter.
2. Press the gingerbread mixture firmly into the bottom of a springform pan lined with parchment paper.
3. In a bowl, beat together the cream cheese, powdered sugar, and vanilla sugar until smooth.
4. Whip the heavy cream and gently fold it into the cream cheese mixture.
5. Pour the mixture over the gingerbread crust and smooth the top.
6. Add the berries on top and sprinkle with cinnamon.
7. Let it chill in the refrigerator for at least 2 hours before serving.
