Ingredients:
- 250 g pasta (e.g., spaghetti or fusilli)
- 2 tbsp olive oil
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 1 bell pepper, diced
- 1 zucchini, sliced
- 1 carrot, grated
- 200 g cherry tomatoes, halved
- Salt and pepper to taste
- Fresh basil for garnish
- Parmesan cheese for serving (optional)
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain and set aside.
2. Heat olive oil in a large skillet over medium heat. Add the onion and sauté until soft.
3. Add the crushed garlic and cook for another minute.
4. Stir in the bell pepper, zucchini, and carrot. Cook until the vegetables are slightly tender.
5. Add the cherry tomatoes and cook for a few more minutes. Season with salt and pepper.
6. Toss the cooked pasta with the vegetable mixture and heat until the pasta is warm.
7. Serve with fresh basil on top and sprinkle with Parmesan cheese if desired.
