This rich and flavorful creamy mushroom soup is a perfect starter or light meal. It comes together quickly and is a great way to utilize fresh mushrooms.

Serving Size: 4 servings
Ingredients:
- 500 g fresh mushrooms
- 1 onion
- 2 garlic cloves
- 1 tbsp butter
- 1 tbsp olive oil
- 750 ml vegetable broth
- 200 ml cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Clean the mushrooms and slice them.
2. Peel and chop the onion and garlic.
3. Heat the butter and olive oil in a pot over medium heat. Add the onion and garlic, and sauté until soft.
4. Add the sliced mushrooms to the pot and cook for about 5-7 minutes, until golden brown.
5. Pour in the vegetable broth and let it simmer for about 10 minutes.
6. Blend the soup with an immersion blender or in a regular blender until desired smoothness is achieved.
7. Stir in the cream and season with salt and pepper. Heat the soup again, but do not boil.
8. Serve the soup in bowls and garnish with fresh parsley.
