Baked Fish Italian Style with Potatoes

A delicious baked fish recipe seasoned with anchovies and fresh basil, served alongside perfectly cooked potatoes. Preparation Time: 45 minutes

Ingredients:
- 8 potatoes
- 1 can anchovies
- 4 tomatoes
- 4 fillets of pike perch (or flounder)
- 0.5 tsp fresh basil
Instructions:
1. Peel and boil the potatoes in salted water until tender.
2. Take the fish fillets and place them on a sheet of aluminum foil.
3. Brush the fish fillets lightly with the liquid from the anchovy can.
4. Slice the tomatoes and arrange them beautifully on top of the fish fillets.
5. Place 1-2 anchovy fillets on each piece of fish and sprinkle with chopped basil.
6. Seal the foil pack tightly.
7. Bake the fish packets in the oven at 200°C (390°F) for about 20-25 minutes.
8. Serve the fish fillets alongside the potatoes.
