A delicious baked fish dish with colorful vegetables, perfect for a healthy meal. Preparation Time: 15 minutes
Cooking Time: 35-40 minutes
Serving Size: 4 servings
Ingredients:
- 4 fish fillets (such as salmon or cod)
- 2 bell peppers (red and yellow)
- 1 zucchini
- 1 red onion
- 2 garlic cloves
- 1 dl white wine
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Preheat the oven to 200°C (390°F).
2. Slice the bell peppers, zucchini, and red onion into strips and crush the garlic cloves.
3. Place the vegetables in a baking dish and drizzle with olive oil, salt, and pepper.
4. Lay the fish fillets on top of the vegetables and pour the white wine into the dish.
5. Cover the dish with aluminum foil and bake in the oven for about 25-30 minutes.
6. Remove the foil and bake for an additional 5-10 minutes, until the fish is cooked through.
7. Garnish with fresh parsley before serving.
