Crispy Sunchokes with Lemon Dip

A simple fried sunchoke treat that elevates snacking to a whole new level. Preparation Time: 30 minutes
Serving Size: 4-6 people
Ingredients:
- 500 g sunchokes - 1 dl all-purpose flour
- 1 tsp salt
- 1/2 tsp black pepper
- 1 dl water (or as needed)
- Oil for deep frying

Lemon Dip:
- 1 dl sour cream - 1 tbsp lemon juice
- 1 tsp lemon zest
- Salt and pepper to taste
Instructions:
1. Peel the sunchokes and slice them into thin rounds. 2. Prepare the batter by mixing the flour, salt, and black pepper in a bowl. Gradually add water until the batter reaches a suitable thickness.
3. Heat the oil in a deep frying pan or deep fryer.
4. Dip the sunchoke slices into the batter and fry them in the hot oil until golden brown. Remove the fried sunchokes and let them drain on paper towels.
5. Make the lemon dip by mixing the sour cream, lemon juice, lemon zest, salt, and pepper in a bowl.
6. Serve the sunchokes warm with the lemon dip.
