Serving Size: 4 servings
Ingredients:
- 4 large bell peppers (red, yellow, or green)
- 300 g ground beef (or chicken)
- 1 dl uncooked rice
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika powder
- 1 tsp oregano
- 400 g crushed tomatoes
- 1 dl shredded cheese (e.g., mozzarella or cheddar)
Instructions:
1. Preheat the oven to 200°C (400°F).
2. Cook the rice according to the package instructions and set aside.
3. Cut the bell peppers in half lengthwise and remove the seeds. Place them in a baking dish.
4. Heat a bit of oil in a pan and add the chopped onion and minced garlic. Sauté until softened.
5. Add the ground meat to the pan and cook until browned. Season with salt, black pepper, paprika powder, and oregano.
6. Stir in the cooked rice and crushed tomatoes. Let it simmer for a few minutes.
7. Fill the bell peppers with the meat mixture and sprinkle shredded cheese on top.
8. Bake in the oven for about 25-30 minutes, until the peppers are tender and the cheese is melted and golden brown.
9. Serve warm.
