Ingredients:
- 1 cup green lentils - 1 medium onion, chopped
- 2 garlic cloves, crushed
- 2 carrots, diced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 6 cups vegetable broth
- 3-4 sunchokes, peeled and sliced
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Rinse the lentils under cold water and set aside. 2. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until it becomes soft.
3. Add crushed garlic, diced carrots, and red bell pepper. Sauté for a few more minutes.
4. Add zucchini and sunchokes, mixing well.
5. Pour in the vegetable broth and add the lentils and thyme. Bring to a boil.
6. Reduce heat and let the stew simmer on low for about 25-30 minutes, until the lentils and vegetables are tender.
7. Season with salt and pepper to taste.
8. Serve warm and garnish with fresh parsley.
