Ingredients:
- 800 g beef (e.g., chuck roast)
- 2 tbsp olive oil
- 2 onions
- 3 cloves garlic
- 4 potatoes
- 3 carrots
- 1 L beef broth
- 2 bay leaves
- 1 tsp thyme
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions:
1. Cut the beef into cubes.
2. Heat the olive oil in a large pot and brown the beef cubes.
3. Add chopped onions and minced garlic, sauté for a few minutes.
4. Peel and chop the potatoes and carrots, and add them to the pot.
5. Pour the beef broth into the pot and add the bay leaves, thyme, salt, and pepper.
6. Let the stew simmer over low heat for about 1.5 hours until the meat is tender.
7. Remove the bay leaves and serve the stew garnished with fresh parsley.
