Serving Size: 4-6 servings
Ingredients:
- 500 g beef (cubed)- 2 tbsp oil
- 1 large onion (chopped)
- 3 garlic cloves (minced)
- 2 tbsp tomato paste
- 400 g canned tomatoes (diced)
- 300 ml beef broth
- 1 lemon (juiced and zested)
- 1 tbsp sugar
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp cinnamon
- 1 tsp turmeric
- 1/2 tsp chili powder (optional)
- Fresh parsley or cilantro (for serving)
Instructions:
1. Heat oil in a large pot and add onions. Sauté until soft.2. Add the beef and brown on all sides.
3. Stir in garlic and tomato paste, mixing well.
4. Pour in diced tomatoes and beef broth. Stir to combine.
5. Add lemon juice, lemon zest, sugar, salt, black pepper, cinnamon, turmeric, and chili powder. Mix the ingredients thoroughly.
6. Simmer the stew on low heat for 1 hour until the meat is tender.
7. Taste and adjust seasoning with more salt or lemon juice if needed.
8. Serve with fresh parsley or cilantro on top.
