A delicious Portuguese beef stew simmered slowly in wine and garlic, packed with flavor and perfect for cold evenings.
Preparation Time: 2 hours
Serving Size: 4-6 servings
Ingredients:
- 1 kg osso bucco beef shank
- 4 garlic cloves
- 2 onions
- 2 carrots
- 3 potatoes
- 1 dl red wine
- 2 dl beef broth
- 2 bay leaves
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- Fresh parsley for garnish
Instructions:
1. Peel and chop the onions, garlic, carrots, and potatoes.
2. Heat the olive oil in a large pot over medium heat. Add the beef shanks and brown them on all sides.
3. Add the onions and garlic to the pot, sautéing for a few minutes until fragrant.
4. Add the carrots and potatoes to the pot.
5. Pour in the red wine and beef broth. Add the bay leaves, salt, and black pepper.
6. Bring the pot to a simmer, cover, and reduce the heat. Let it stew on low heat for about 1.5 hours, or until the meat is tender.
7. Remove the bay leaves before serving and garnish with fresh parsley.
