Ingredients:
- 4 chicken breast fillets
- 200 g fresh spinach
- 150 g feta cheese
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon dried oregano
- Juice of 1/2 lemon
Instructions:
1. Heat olive oil in a skillet over medium heat. Add minced garlic and sauté until golden brown.
2. Add fresh spinach to the skillet and cook until wilted. Season with salt, pepper, and oregano. Remove from heat.
3. Crumble the feta cheese into the spinach mixture and stir well.
4. Make deep slits in each chicken breast fillet to create pockets for stuffing.
5. Fill each chicken breast with the spinach-feta mixture and secure the openings with toothpicks or kitchen twine.
6. Cook the stuffed chicken breasts in the skillet over medium heat for about 6–7 minutes on each side or until fully cooked.
7. Squeeze lemon juice over the cooked fillets before serving.
