A delicious pasta inspired by Turku Castle and its surroundings. Quick and easy to prepare, perfect for a weeknight dinner.

Ingredients:

- 300 g pasta (e.g., spaghetti or penne)
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 red bell pepper, diced
- 200 g leeks, sliced
- 400 g canned crushed tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
- 100 g grated Parmesan cheese
- Fresh basil leaves for garnish

Instructions:

1. Cook the pasta according to the package instructions in salted water until al dente.
2. Heat olive oil in a large pan over medium heat. Add the onion and garlic, sauté until soft.
3. Add the bell pepper and leeks to the pan and cook for about 5 minutes until the vegetables are tender.
4. Pour in the crushed tomatoes and season with oregano, salt, and black pepper. Let it simmer for about 10 minutes.
5. Mix the cooked pasta into the sauce and heat through for a moment.
6. Serve with grated Parmesan cheese and fresh basil leaves on top.
