Delicious Russian pancakes perfect for celebrations or special occasions, inspired by the traditional Blini Day in Turku.
Preparation Time: 1.5 hours
Serving Size: 4-6 servings

Ingredients:

- 2 dl buckwheat flour
- 1 dl wheat flour
- 1 tsp salt
- 1 tsp sugar
- 1 packet dry yeast (11 g)
- 4 dl milk
- 2 eggs
- 50 g butter (melted)
- 1/2 dl sour cream (for serving)
- 100 g roe (or other filling)
- Fresh dill (for garnish)

Instructions:

1. In a bowl, mix together the buckwheat flour, wheat flour, salt, sugar, and dry yeast.
2. Gradually add the milk and stir until you have a smooth batter.
3. Add the eggs and melted butter, mixing well.
4. Cover the batter with a cloth and let it rise at room temperature for about 1 hour.
5. Heat a frying pan and lightly grease it.
6. Pour some batter onto the pan and cook the blini on both sides until golden brown.
7. Serve the blinis with sour cream, roe, and fresh dill on top.
