Delicious blinis perfect for filling with various toppings. Preparation time is long, but the result is worth the effort.
Preparation Time: 24 hours + cooking time
Serving Size: 4-6 people
Ingredients:
- 2 dl all-purpose flour
- 2 dl rye flour
- 1 dl milk
- 1 dl water
- 1 tsp salt
- 1 tsp sugar
- 1 packet dry yeast
- 2 eggs
- 2 dl sour cream or crème fraîche
- Butter for frying
Instructions:
1. In a large bowl, combine all-purpose flour, rye flour, salt, sugar, and dry yeast.
2. Add milk and water to the flour mixture and stir until you have a smooth batter.
3. Cover the bowl with plastic wrap and let the batter rise at room temperature for about 24 hours.
4. Once the batter has risen, add the eggs and mix well.
5. Heat a frying pan and add butter.
6. Pour a scoop of batter onto the pan and cook the blini until golden brown on both sides.
7. Repeat until all the batter is used.
8. Serve the blinis with your desired toppings, such as sour cream, caviar, or smoked salmon.
