French Blinis with Marinated Mushrooms and Hummus

Delicious French blinis served with flavorful marinated mushrooms and homemade hummus. This recipe is perfect as an appetizer or a light main course.

Serving Size: 4 people

Ingredients:

- 2 dl all-purpose flour
- 1 dl milk
- 1 dl water
- 2 eggs
- 1 tsp salt
- 0.5 tsp baking powder
- 2 tbsp melted butter
- 200 g marinated mushrooms

For the Hummus:

- 1 dl chickpeas (cooked or canned)
- 2 tbsp tahini
- 1 garlic clove
- 2 tbsp lemon juice
- 2 tbsp olive oil
- Salt to taste

Instructions:

1. In a bowl, mix the flour, salt, and baking powder.
2. Gradually add the eggs, milk, and water to the mixture, stirring until smooth.
3. Stir in the melted butter and mix well.
4. Heat a skillet over medium heat and add a little oil.
5. Pour some batter onto the skillet and cook the blini for about 2-3 minutes on each side until golden brown.
6. For the hummus: Place chickpeas, tahini, garlic, lemon juice, olive oil, and salt in a blender. Blend until smooth.
7. Serve the blinis with marinated mushrooms and hummus.
