Delicious Russian pancakes that can be filled with various sweet or savory toppings. While the preparation time is long, the final result is definitely worth the effort.
Preparation Time: 24 hours (12-24 hours rising time + cooking time)
Serving Size: 4-6 servings
Ingredients:
- 250 g blini flour
- 1 tsp salt
- 1 tbsp sugar
- 200 ml milk
- 100 ml water
- 10 g fresh yeast
- 2 eggs
- 50 g melted butter or oil for frying
Instructions:
1. Dissolve the yeast in warm milk and water.
2. In a bowl, mix the blini flour, salt, and sugar.
3. Add the liquid mixture to the flour and stir until smooth.
4. Cover the bowl with a cloth and let the batter rise at room temperature for 12-24 hours.
5. Once the batter has risen, add the eggs and mix well.
6. Heat a frying pan and add melted butter or oil.
7. Pour some batter into the pan and cook the blini until golden brown on both sides.
8. Serve the blini with your choice of toppings like sour cream, caviar, or vegetables.
