Delicious thin blinis served with marinated mushrooms and homemade hummus. A great choice for gatherings or brunch!

Ingredients:

Blinis:
- 250 g blini flour
- 1 tsp salt
- 200 ml milk
- 200 ml water
- 1 egg
- 100 ml melted butter
- 1 tsp dry yeast
Marinated Mushrooms:
- 200 g fresh mushrooms (e.g. button or chanterelle)
- 2 tbsp vinegar
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp sugar
- 1 garlic clove (minced)
- 1 tsp fresh thyme or parsley
Hummus:
- 1 can chickpeas (about 400 g)
- 2 tbsp tahini
- 2 tbsp lemon juice
- 1 garlic clove (minced)
- 3 tbsp olive oil
- Salt to taste
- Water as needed

Instructions:

1. Blinis: In a bowl, mix the blini flour, salt, and dry yeast. Gradually add the milk and water while stirring. Add the egg and melted butter. Let the batter rest for about 15 minutes.
2. Heat a skillet over medium heat and add a little butter. Pour batter onto the skillet to form a thin layer. Cook the blini for about 2-3 minutes on each side until golden brown. Repeat until all batter is used.
3. Marinated Mushrooms: In a bowl, combine all marinade ingredients. Add the mushrooms and mix well. Let marinate in the refrigerator for at least 30 minutes.
4. Hummus: Drain and rinse the chickpeas. Blend all hummus ingredients in a food processor until smooth. Add water as needed to achieve desired consistency.
5. Serve the blinis with marinated mushrooms and hummus.
