Ingredients:

- 2 dl gluten-free flour blend
- 1 dl milk
- 1 dl water
- 2 eggs
- 1/2 tsp salt
- 1/2 tsp sugar
- 1/2 packet dry yeast
- 2 tbsp melted butter
- 200 g caviar mousse
- 200 g lime-pink peppercorn cured salmon
- Fresh dill for garnish

Instructions:

1. In a bowl, mix the gluten-free flour blend, salt, sugar, and dry yeast.
2. Add the milk and water to the mixture and stir well.
3. Incorporate the eggs and melted butter, mixing until a smooth batter forms.
4. Let the batter rest at room temperature for about 30 minutes.
5. Heat a frying pan over medium heat and add a splash of oil.
6. Pour small amounts of batter onto the pan and cook each blini for about 2-3 minutes on each side until golden brown.
7. Serve the blinis topped with caviar mousse and slices of cured salmon.
8. Garnish with fresh dill before serving.
