Creamy Mushroom Soup

Serving Size: 4 servings
Ingredients:
- 300 g fresh mushrooms (e.g. button mushrooms or chanterelles)
- 1 large onion
- 2 cloves garlic
- 4 dl vegetable broth
- 2 dl cream
- 2 tbsp butter
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Peel and finely chop the onion and garlic.
2. Clean the mushrooms and slice them.
3. Heat the butter in a pot over medium heat. Add the onion and garlic, and sauté for about 5 minutes.
4. Add the mushrooms and cook until they are soft and the moisture evaporates, about 7-10 minutes.
5. Pour the vegetable broth into the pot and let it simmer for about 10 minutes.
6. Stir in the cream and heat the soup for a few more minutes. Season with salt and pepper.
7. Serve the soup garnished with fresh parsley.
