Delicious Vegetable Pasta

Ingredients:
- 250 g pasta (such as spaghetti or fusilli)
- 2 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, crushed
- 1 red bell pepper, diced
- 1 zucchini, sliced
- 150 g cherry tomatoes, halved
- 100 g spinach
- Salt and pepper to taste
- 50 g grated Parmesan cheese (optional)
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain and set aside.
2. Heat olive oil in a large skillet over medium heat. Add chopped onion and crushed garlic, sauté until soft.
3. Add bell pepper and zucchini to the skillet. Cook for about 5 minutes, until the vegetables are tender.
4. Stir in cherry tomatoes and spinach. Cook for another 2-3 minutes, until the spinach is wilted.
5. Toss the cooked pasta with the vegetable mixture and season with salt and pepper.
6. Serve immediately, optionally sprinkling grated Parmesan cheese on top.
