Ingredients
- 8 corn tortillas - 1 can black beans, rinsed and drained
- 1 avocado, sliced
- 1 cucumber, diced
- 1 tomato, diced
- 1 red onion, finely chopped
- 1 cup fresh cilantro, chopped
- 1 lime, juiced
- Salt and pepper to taste
- 1 cup vegan yogurt or fresh salsa
Instructions
1. Prepare the filling: In a bowl, mix black beans, cucumber, tomato, red onion, and cilantro. Add lime juice, salt, and pepper to taste. 2. Heat the corn tortillas in a skillet for about 20-30 seconds on each side until warm.
3. Fill each tortilla with the black bean mixture, top with avocado slices and vegan yogurt or salsa.
4. Serve immediately and enjoy!
