Serving Size: 4 servings
Ingredients:
- 400 g fish (e.g. salmon or cod)
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika
- 1/2 tsp chili powder
- 4-6 small tortillas
- 1 avocado
- 1/2 red onion
- Fresh cilantro
Chipotle-Lime Mayonnaise:
- 1 dl mayonnaise
- 1 tbsp chipotle chili (from a jar or powdered)
- Juice of 1 lime
- Salt to taste
Instructions:
1. Preheat the oven to 200°C (400°F). Season the fish with olive oil, salt, black pepper, smoked paprika, and chili powder.
2. Bake the fish in the oven for about 15-20 minutes, until cooked through and easily flaked.
3. To prepare the chipotle-lime mayonnaise, mix mayonnaise, chipotle chili, lime juice, and salt in a bowl. Stir well to combine.
4. Slice the avocado and red onion into thin slices.
5. Warm the tortillas in a pan or microwave.
6. Assemble the taco: place a piece of baked fish on the tortilla, add avocado, red onion, and fresh cilantro.
7. Drizzle with chipotle-lime mayonnaise and serve immediately.
