- 2 medium sweet potatoes
- 1 can of pinto beans (or other beans)
- 1 cup fresh cilantro, chopped
- 1 red onion, thinly sliced
- 1 avocado, diced
- 1 cup cherry tomatoes, halved
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 2 teaspoons chipotle sauce (or to taste)
- Salt and pepper to taste
- Nuts or seeds (e.g., sunflower seeds) for garnish
Instructions:
1. Peel the sweet potatoes and spiralize them into noodles.
2. Heat olive oil in a large pan over medium heat and add the sweet potato noodles. Sauté for about 5-7 minutes until slightly softened.
3. Drain the beans and add them to the pan with the sweet potato noodles. Cook for another 3-5 minutes.
4. Remove the pan from heat and add the chopped cilantro, red onion, avocado, and cherry tomatoes.
5. In a bowl, mix lime juice, chipotle sauce, salt, and pepper. Pour the dressing over the salad and toss well.
