A delicious and nutritious bread made from teff flour and grated carrots, perfect for a gluten-free diet.

Serving Size: 1 loaf

Ingredients:

- 2 cups warm water
- 25 g (½ cube) yeast
- 1 tablespoon psyllium husk
- 1 teaspoon salt
- 2 cups grated carrots
- 2 cups teff flour
- 1 cup buckwheat flour
- 1 cup potato fiber (e.g., Semper Pofiber)
- 1.5 cups coarse gluten-free flour mix (e.g., Semper)
- 1 teaspoon xanthan gum

Instructions:

1. Dissolve the yeast in warm water and mix in the psyllium husk. Let it sit for about 5 minutes to thicken.
2. Add salt and grated carrots to the psyllium mixture and stir well.
3. In a separate bowl, combine teff flour, buckwheat flour, potato fiber, and xanthan gum.
4. Gradually add the flour mixture to the wet ingredients and mix vigorously for a few minutes, either with a stand mixer or using a hand mixer with dough hooks.
5. Grease a loaf pan and pour the dough into it. Use flour to help flatten the dough evenly in the pan.
6. Allow the dough to rise in a warm place for 30 minutes.
7. Bake in a preheated oven at 225°C (437°F) for about 50 minutes. The bread will have a firm crust, which will soften as it cools in the pan covered with a kitchen towel.
