A delicious and spicy Red Curry, this Thai classic brings the flavors of Asia right to your kitchen. Preparation time is about 30 minutes and the recipe serves 4.
Ingredients:
- 400 g coconut milk
- 2 tbsp red curry paste
- 300 g chicken breast, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 200 g mushrooms, sliced
- 100 g green beans
- 2 tbsp fish sauce
- 1 tbsp sugar
- 2 tbsp fresh basil, chopped
- Juice of 1 lime
- 1 tbsp oil for frying
Instructions:
1. Heat the oil in a large frying pan over medium heat.
2. Add the red curry paste and fry for about a minute until fragrant.
3. Add the sliced chicken and cook until fully cooked.
4. Pour in the coconut milk and stir well.
5. Add the sliced bell peppers, mushrooms, and green beans. Let it simmer on low heat for about 10 minutes.
6. Stir in the fish sauce and sugar, mixing well.
7. Remove the pan from heat and add lime juice and chopped basil.
8. Serve warm with rice.
