Ingredients:
- 1 onion, chopped
- 1 garlic clove, crushed
- 3 tsp canola oil
- 4 tbsp all-purpose flour
- 1 liter vegetable broth
- 200 g fresh mushrooms, sliced
- 1 tsp chili (or to taste)
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Heat canola oil in a pot over medium heat. Add the chopped onion and crushed garlic, sautéing until soft.
2. Stir in the all-purpose flour and mix well. Cook the mixture for about a minute to allow the flour to cook.
3. Gradually pour in the vegetable broth while stirring continuously to avoid lumps.
4. Add the sliced mushrooms and chili. Allow the soup to simmer on low heat for about 15-20 minutes.
5. Season with salt and pepper to taste. Serve the soup garnished with fresh parsley.
