Ingredients:
- 1 tablespoon oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 tablespoon fresh ginger, grated
- 1 red chili, sliced
- 1 liter vegetable or chicken broth
- 2 tablespoons soy sauce
- 1 tablespoon miso paste
- 1 teaspoon Sichuan peppercorns
- 200 g tofu, cubed
- 150 g noodles
- 2 green onions, chopped
- Fresh cilantro for garnish
Instructions:
1. Heat the oil in a large pot over medium heat.
2. Add the chopped onion and sauté until softened.
3. Stir in the crushed garlic, grated ginger, and sliced chili; sauté for a minute longer.
4. Pour in the broth and add the soy sauce, miso paste, and Sichuan peppercorns. Bring to a boil.
5. Add the tofu and noodles, cooking until the noodles are tender (about 5-7 minutes).
6. Remove the pot from heat and stir in the chopped green onions.
7. Serve hot, garnished with fresh cilantro.
