A flavorful and hearty soup that combines aromatic peppers, robust garlic, and bright basil. Perfect as a starter or main course with a salad. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 500 g red organic bell peppers
- 5 organic garlic cloves
- 1 dl fresh basil
- 2 dl organic cream
- 1 onion
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 l vegetable broth
Instructions:
1. Rinse and chop the red bell peppers and onion.
2. Peel and finely chop the garlic cloves.
3. Heat the olive oil in a pot and sauté the onion and garlic until soft.
4. Add the bell peppers to the pot and cook for a few minutes.
5. Pour in the vegetable broth and simmer for about 15-20 minutes until the peppers are tender.
6. Blend the soup using an immersion blender or a regular blender until smooth.
7. Stir in the cream and basil, mixing well. Heat the soup once more.
8. Season with salt and pepper to taste.
Serve the soup warm.
