Tsatsiki - Cold Yogurt Cucumber Sauce

A refreshing and delicious yogurt-cucumber sauce, perfect for grilled dishes, salads, or as a dip. Preparation time is about 15 minutes, serving size is for 4-6 people.Ingredients:
- 2-3 cloves of garlic
- 1 container (about 400 g) of Bulgarian yogurt or authentic Greek yogurt
- 1 tsp salt
- 1 tbsp sugar
- 0.25 tsp black pepper
- 2 tbsp white wine vinegar
- 1 cucumber
Instructions:
1. If using Bulgarian yogurt, strain it using a coffee filter for a couple of hours to thicken. Greek yogurt is ready to use as is.
2. Grate the cucumber coarsely and squeeze out the excess moisture.
3. Peel and crush the garlic cloves.
4. In a bowl, mix the yogurt, drained cucumber, crushed garlic, salt, sugar, black pepper, and white wine vinegar.
5. Stir all ingredients well and taste. Add more salt or spices if needed.
6. Let the tsatsiki sit in the fridge for at least 30 minutes before serving to allow the flavors to blend.
