Serving Size: 4 servings
Ingredients:
- 800 g crushed tomatoes
- 1 onion
- 2 garlic cloves
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon sugar
- 100 ml vegetable broth
- 50 g fresh basil
Instructions:
1. Peel and chop the onion and garlic.
2. Heat olive oil in a pot over medium heat and sauté the onion and garlic for about 5 minutes until they are soft.
3. Add crushed tomatoes, salt, black pepper, sugar, and vegetable broth. Mix well.
4. Let the soup simmer on low heat for about 15 minutes.
5. Remove the pot from the heat and blend the soup with an immersion blender or in a regular blender until smooth if desired.
6. Stir in the chopped basil and serve warm.
