Ingredients:
- 400 g shrimp (fresh or frozen)
- 1 can (400 g) crushed tomatoes
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1 tbsp olive oil
- 1 liter fish stock
- 1 tsp dried oregano
- 1/2 tsp chili powder (more if desired)
- Salt and pepper to taste
- Fresh herbs (e.g., basil or parsley) for garnish
- Lemon wedges for serving
Instructions:
1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is soft.
2. Add the crushed tomatoes to the pot and stir well. Let it simmer for about 5 minutes.
3. Pour the fish stock into the pot and add the oregano and chili powder. Allow the soup to simmer on low heat for about 10 minutes.
4. Add the shrimp to the soup and cook for an additional 5 minutes, until the shrimp are cooked through and heated.
5. Season the soup with salt and pepper to taste.
6. Serve the soup garnished with fresh herbs and lemon wedges.
