A delicious and nutritious pasta dish packed with fresh vegetables and feta cheese.

Serving Size: 4 servings
Ingredients:
- 250 g pasta (e.g., spaghetti or penne)
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 red bell pepper, diced
- 200 g cherry tomatoes, halved
- 150 g fresh spinach
- 100 g feta cheese, crumbled
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain and reserve some cooking water.
2. Heat olive oil in a large skillet over medium heat. Add onion and garlic, sauté for a few minutes until softened.
3. Add the diced bell pepper and cherry tomatoes, cooking for about 5 minutes until the tomatoes soften.
4. Stir in the spinach and cook until wilted.
5. Add the cooked pasta to the skillet, mixing well and adding reserved pasta water as needed to keep the mixture moist.
6. Season with salt and pepper. Gently fold in the crumbled feta cheese.
7. Serve immediately, garnished with fresh basil if desired.
