A delicious tomato soup perfect for the spring rains and sunshine, bringing the taste of summer to your palate. Preparation time is about 30 minutes and this recipe serves four.
Ingredients:
- 800 g ripe tomatoes
- 1 onion
- 2 garlic cloves
- 300 ml vegetable broth
- 2 tbsp olive oil
- Salt to taste
- Black pepper to taste
- Fresh basil for garnish
Instructions:
1. Peel and finely chop the onion and garlic.
2. Heat olive oil in a pot and sauté the onion and garlic until they are soft.
3. Add the peeled and chopped tomatoes to the pot. Cook the mixture for about 10 minutes.
4. Pour in the vegetable broth and season with salt and black pepper. Let the soup simmer for about 10 minutes.
5. Blend the soup with an immersion blender or in a countertop blender until smooth.
6. Check the flavor and adjust salt and pepper if necessary.
7. Serve the soup garnished with fresh basil.
