This Indian-inspired tomato soup is rich with spices and creamy coconut milk, offering a delightful blend of flavors that warms the soul.
Ingredients:
- 1 kg ripe tomatoes, chopped
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 1 tablespoon fresh ginger, grated
- 1 tablespoon curry powder
- 1 teaspoon cumin seeds
- 1 teaspoon chili powder (to taste)
- 400 ml coconut milk
- Salt and pepper to taste
- Fresh coriander for garnish
- 2 tablespoons oil
Instructions:
1. Heat the oil in a pot over medium heat. Add the chopped onion and sauté until soft.
2. Add the crushed garlic and grated ginger, cooking for an additional few minutes.
3. Stir in the curry powder, cumin, and chili powder. Cook the spices for about a minute until fragrant.
4. Add the chopped tomatoes to the pot. Let it simmer for about 10-15 minutes until the tomatoes are soft.
5. Blend the soup until smooth using an immersion blender or a regular blender.
6. Pour in the coconut milk and mix well. Season with salt and pepper to taste.
7. Serve the soup hot, garnished with fresh coriander.
