- 2 cups chickpea flour
- 1 cup water
- 1 grated carrot
- 1 grated zucchini
- 1 chopped red onion
- 2 crushed garlic cloves
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon paprika
- ½ teaspoon cumin
- 2 tablespoons olive oil for frying
- Chopped fresh herbs (such as parsley or basil)
Instructions:
1. In a bowl, mix the chickpea flour and water until you achieve a smooth batter.
2. Add the grated carrot, zucchini, chopped onion, crushed garlic, and seasonings to the batter. Mix well.
3. Stir in the chopped herbs until combined.
4. Heat the olive oil in a skillet over medium heat.
5. Shape the batter into patties and fry them in the skillet for about 4-5 minutes on each side, until golden brown.
6. Serve warm with a salad or tahini sauce.
