A warm and flavorful soup made with fresh tomatoes, sweet peppers, and a hint of spice.

Serving Size: 4 servings
Ingredients:
- 5 dl water
- 2 sweet onions (small or medium)
- Paprika powder to taste
- Chili powder to taste
- Fresh basil leaves
- (Vegetable broth cube, optional)
- 4 mild green pepperoncini
- 2-4 garlic cloves
- 3 sweet bell peppers
- 1 box cherry tomatoes
- 500 g crushed tomatoes
- Olive oil for sautéing
- 1 can flavored diced tomatoes
Instructions:
1. Chop the sweet onions, garlic, and bell peppers.
2. Sauté the chopped ingredients in olive oil in a pot until they soften.
3. Add the crushed tomatoes, water, and vegetable broth cube (if using) to the sautéed mixture.
4. Slice the green pepperoncini and add them to the soup.
5. Season with paprika powder, chili powder, and fresh basil to taste.
6. Add the cherry tomatoes and canned diced tomatoes to the soup.
7. Let the soup simmer on low heat for about 20-30 minutes.
8. Blend the soup until smooth if desired, and serve hot.
