A delicious tofu bowl featuring sesame-ginger marinated tofu and leftover vegetables from the weekend. A perfect meal that is both nutritious and tasty.

Ingredients:

- 200 g tofu
- 2 tbsp sesame oil
- 2 tbsp soy sauce
- 1 tbsp fresh ginger, grated
- 1 tbsp honey or maple syrup
- 1/2 tsp chili powder
- 1 carrot, julienned
- 1 bell pepper, julienned
- 100 g broccoli, chopped
- 100 g cooked noodles
- 1 tbsp sesame seeds
- Fresh coriander for garnish

Instructions:

1. Pat the tofu dry with paper towels and cut it into cubes.
2. In a bowl, mix together the sesame oil, soy sauce, grated ginger, honey, and chili powder. Add the tofu cubes and marinate for at least 15 minutes.
3. Heat a frying pan over medium heat and add the marinated tofu. Cook until the tofu is golden brown, about 5-7 minutes.
4. Add the julienned carrot, bell pepper, and broccoli to the pan. Cook for a few more minutes until the vegetables are tender yet crisp.
5. Serve the tofu and vegetable mixture over the cooked noodles. Sprinkle sesame seeds and fresh coriander on top.
