A comforting and flavorful curry soup, perfect for a cozy autumn evening. This recipe is easy to make and offers great plant-based protein from tofu. Serves 2 large portions or 4 smaller ones.

Ingredients:

- 150 g smoked or marinated tofu
- 1 small onion
- 3 garlic cloves
- 2 cm piece of ginger
- ½ chili, deseeded
- 1 small red bell pepper
- 1 tbsp curry powder
- 1 tbsp turmeric
- 1 tsp paprika powder
- 2 dl water
- 4 dl coconut milk
- 1 vegetable bouillon cube
- small head of broccoli (about 3 dl)
- 3 servings of whole grain noodles (about 150 g)
- salt
- oil for frying

Instructions:

1. Cube the tofu and fry it in oil until crispy in a pan.
2. Chop the onion, garlic, ginger, and chili. Dice the bell pepper.
3. Drizzle oil in a pot and sauté the chopped vegetables until soft.
4. Add water and the vegetable bouillon cube to the pot. Pour in the coconut milk and let it simmer for 5 minutes.
5. Chop the broccoli and add it, along with the noodles and fried tofu, to the pot. Cook until the noodles are tender.
6. Taste and adjust seasoning with salt and additional chili if desired.
