Ingredients:
- 500 g fresh broccoli
- 1 large potato
- 1 small onion
- 2 garlic cloves
- 750 ml vegetable broth
- 200 ml heavy cream
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
1. Rinse the broccoli and chop it into small pieces. Peel and chop the potato, onion, and garlic.
2. Heat the olive oil in a large pot over medium heat. Add the onion and garlic, sauté for about 5 minutes until they are soft.
3. Add the broccoli and potato to the pot, continuing to sauté for a few more minutes.
4. Pour the vegetable broth into the pot and bring to a boil. Reduce the heat and let the soup simmer for about 15-20 minutes until the vegetables are tender.
5. Blend the soup using an immersion blender or a regular blender until smooth. Stir in the cream and mix well.
6. Season the soup with salt and pepper. Serve hot, garnished with fresh parsley if desired.
