Ingredients:
- 500 g chicken breast fillets
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 3 carrots, sliced
- 2 potatoes, diced
- 200 ml white wine
- 500 ml chicken broth
- 2 tbsp fresh thyme (or 1 tbsp dried)
- Salt and pepper to taste
Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onion and crushed garlic, sauté until soft.
3. Add chicken breast fillets and cook until golden brown.
4. Stir in the sliced carrots and diced potatoes.
5. Pour the white wine into the pot and let it simmer for a few minutes.
6. Add chicken broth and thyme, stir well.
7. Season with salt and pepper, cover the pot, and simmer on low heat for about 30-40 minutes, until the chicken and vegetables are cooked through.
8. Serve warm, ideally with fresh bread.
