A delicious chicken stew bursting with flavors and aromas that will transport you to Morocco. Serve it with boiled rice and enjoy with a rich red wine.

Ingredients:

- 500 g chicken fillets, diced
- 2 tbsp olive oil
- 1 large onion, chopped
- 2 garlic cloves, crushed
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 tsp cumin
- 1 tsp cinnamon
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 400 g crushed tomatoes
- 200 ml chicken or vegetable broth
- 100 g kalamata olives
- Fresh parsley or coriander for garnish

Instructions:

1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until softened.
2. Add the diced chicken to the pot and brown on all sides.
3. Stir in the diced bell peppers and spices (cumin, cinnamon, paprika, salt, and pepper). Mix well.
4. Pour in the crushed tomatoes and broth. Stir and bring to a boil.
5. Reduce heat, cover the pot, and let it simmer for about 30 minutes, until the chicken is cooked through.
6. Add kalamata olives and stir. Let it simmer for a few more minutes.
7. Serve with boiled rice and garnish with fresh parsley or coriander.
