A delicious dish combining tender spring cabbage, baby carrots, ground chicken, and rice. This easy and nutritious meal is perfect for a quick weeknight dinner. Preparation Time: 30 minutes

Ingredients:
- 400 g ground chicken - 1 small spring cabbage
- 200 g baby carrots
- 2 dl rice
- 1 onion
- 3 dl chicken broth
- 2 tbsp oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Peel and chop the onion. Heat oil in a large skillet and sauté the onion for a few minutes until translucent.2. Add the ground chicken and cook until browned. Season with salt and pepper.
3. Chop the spring cabbage and baby carrots. Add them to the skillet and mix well.
4. Rinse the rice and add it to the skillet. Pour the chicken broth over and stir.
5. Bring to a boil, reduce the heat, and cover the skillet. Let it cook for about 15-20 minutes, until the rice is tender and the liquid is absorbed.
6. Check the seasoning and adjust with more salt and pepper if needed. Garnish with fresh parsley before serving.
