Lemon Chicken Stew

A zesty and creamy chicken stew infused with fresh lemon, perfect for a comforting meal. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 500 g chicken breast fillets
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 lemon, juiced and zested
- 2 dl chicken broth
- 1 dl cream
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp fresh thyme or 1 tsp dried thyme
- 200 g green beans
- 1 bell pepper, diced
Instructions:
1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until soft.
2. Add chicken breast fillets and cook until golden brown.
3. Squeeze the lemon juice and add it to the pot along with the lemon zest, chicken broth, cream, salt, black pepper, and thyme.
4. Stir well and let it simmer on low heat for about 15 minutes.
5. Add the green beans and bell pepper, cook for another 5-10 minutes until the vegetables are tender.
6. Serve warm, ideally with rice or potatoes.
