This delicious curry chicken dish features tender chicken breast cooked in a creamy coconut milk sauce with vibrant bell peppers and aromatic garlic, perfect for serving over rice or with naan bread.
Ingredients:
- 2-4 chicken breast fillets (unseasoned)
- 1 red bell pepper
- 1 green bell pepper
- 3 garlic cloves
- Chives
- 1 can coconut milk
- 3 tsp curry powder
- Salt and pepper to taste
- Oil for frying
Instructions:
1. Peel and finely chop the garlic cloves.
2. Cut the chicken breast fillets into strips.
3. Heat oil in a frying pan over medium heat.
4. Add the chicken strips to the pan and cook until they are fully cooked.
5. Add the chopped garlic and sauté for another minute.
6. Cut the bell peppers into strips and add them to the pan. Cook for a few minutes until the peppers are softened.
7. Pour the coconut milk into the pan and mix well.
8. Add curry powder, salt, and pepper. Let it simmer on low heat for about 10 minutes.
