Thyme-Cured Salmon with Lemon-Dijon Mayonnaise

A delicious thyme-cured salmon, perfect as an appetizer or main dish, served with a refreshing lemon-dijon mayonnaise. Preparation Time: 24 hours

Ingredients:
- 500 g salmon fillet - 2 tbsp cognac (optional)
- 2 tbsp sugar
- 1 tbsp sea salt
- 1 tsp cracked white pepper
- Fresh thyme (a few sprigs)
Lemon-Dijon Mayonnaise:
- 1 dl mayonnaise
- 1 tbsp Dijon mustard
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions:
1. Place the salmon fillet skin-side down on parchment paper. Brush the salmon with cognac if desired. Sprinkle sugar, sea salt, and cracked white pepper over the top. Add sprigs of thyme on top.2. Wrap the salmon in the paper and then in plastic wrap, placing a light weight on top. Refrigerate for at least 24 hours to cure.
3. After curing, remove the seasoning from the salmon's surface and slice the salmon thinly at an angle for serving.
4. Combine the mayonnaise ingredients in a bowl and mix well. Serve the sauce alongside the cured salmon slices.
